Stuffed Bell Peppers


I made these for dinner last night AND.....
no one ate them.

Jack was a long shot but Tyler had no excuse! I even generously applied cheese to his and offered to put ranch on it (I know, right? RANCH!)

I kind of made up the recipe but this is what I did:

Stuffed Bell Peppers
Da Innards:
1 C. of cooked Quinoa (Keen-wa)
1/2 can of Black Beans
1 C. of shredded Zucchini (w/ water pressed out)
1 package of chopped Mushrooms
3 stalks of chopped green onions
1 handful of cilantro
1 pkg. of Taco Mix
Cheese
3 Bell Peppers

Chop peppers in half & coat peppers with olive oil and bake for 20-30 minutes at 350 or until roasted. Mix all stuffin' materials and um...stuff the peppers. Top with cheese if you want and bake for 10 minutes or until cheese is melted or heated through.

Serve to family that will poke and prod it. Wait until children take a tiny nibble and say, "yucky" to get offended. Make sure to watch husband's reaction to realize that he think's it tastes like @$$ and then get REALLY offended.  Pop leftover mac 'n cheese in the microwave while you eat your beautiful, gourmet stuffed bell peppers by yourself.

So for the rest of the week, I've got lunch. No biggie. I thought they were delicious although I have issues with bell peppers. I'm not sure if I like them or not. Maybe it's the texture...

Is it weird that I made a meal that I knew that I wouldn't really like, knew Jack wouldn't touch, with ingredients like "mushrooms" & "zucchini" that would mentally block Tyler from eating it?
...

It goes great with chips and salsa.

I'v done this many times. I have tasted recipes as I was making it and didn't like the taste and just kkept thinking that once it was done I might! Nope, not usually! Most of the time it was in the name of health or can be blamed on pregnancy =)

They sound yummy to me! Good for you for at least trying, even though you knew your kid and your older kid wouldn't like it. I do the same thing, and still get upset when no one eats it.

Hahaha, that's awesome. At least you like it. I've made new recipes that no one likes and we just have to throw it away. This looks yummy to me. Maybe I'll try it out!
